Here are some examples of food wishes we made come true.


 One Pound Stuffed Burgers - We jammed these puppies full of everything under the sun. Jalapeno Havarti, Bleu Cheese and Bacon, Feta and Spinach in a Turkey Burger. You name it, we'll stuff it.

 These monstrosities can feed even the most ravenous of diners. They take a while to prepare, need to be babied on the grill, but man is it ever worth it. Just don't plan on doing much of anything after ingesting one of these beasts.

Speaking of stuffed, we decided to stuff our favourite meat, pork, with our second favourite meat, more pork. The result has yet to be officially named, although once our taste tester is out of the hospital we're gonna get him to vote on "Frankenbacon." What you see before you is bacon stuff with sausage and then smoked. We peeled off slice after slice from this loaf of meat and then grilled it in a skillet.

In fact, it's probably not a great idea to serve these at a party, seeing as how anyone who actually gets to the end will want to curl up and take a nap shortly after. It'll put you into a food coma.

We also toyed with Asian Fusion, making an Asian Pulled Pork topped with our Asian Coleslaw.

Tacos with Marinated Pork fried up Carnitas style with more of the Asian Coleslaw. Don't forget the Rooster sauce!

They say Breakfast is the most important meal of the day, we even attempted to barbecue Breakast. It's a BLT waiting to be assembled, with home fries on the side. We even toasted the bread right on the grill.

The point of this whole exercise is to show you two things: one, our passion for food. If you can look at these experiments and not see how much we love what we do then you're probably not going to find us worth your while. Two, we'll try just about anything if it results in a good meal.

We hope you'll see that no matter what you have in mind when you contract us we'll make your dreams come true too!







Super Sides

 Cornbread

What's a barbecue without a little cornbread? Cheddar Japaleno, Chipotle and Smoked Bacon or just classic Cornbread. Having a basket of these single-servings of cornbread will add distinction and authenticity to every main course.

 Mac and Cheese
This popular side dish is a staple of comfort food. Our 5-cheese sauce smothers perfectly done past before it's topped with seasoned breadcrumbs and baked. The perfect stick-to-your-ribs side dish.





Chile Con Carne

We slowly simmer smoked chile peppers to make the base for our rich and hearty chili. Everything's fair game in chili so don't be surprised to find pieces of brisket, bacon or hamburger in our meaty meal-in-a-bowl.



 Fresh Cut Kettle Chips

Nothing beats chips fresh out of the fryer. Try our distinctive Sweet Chile and Sour Cream, or try them with our signature Gringo Seasoning. We'll do our best to keep up with demand, but these guys go quick!



Baked Beans

Almost as important to barbecue as the smoked sausages, baked beans may not be everyone's favourite, but this classic side dish is a must for the authentic experience. Slowly simmered for hours, and sometimes even smoked if we can find room on the grill, you won't forget the difference scratch-made makes.

Slaws, Salads and Sauces

From our classic Coleslaw to our  Caesar Salad, we've got something for everyone. Lettuce, Kale, Spinach, Broccoli and mixed Greens will please many. Other favourite sides like Potato Salad and Pasta Salad are also available. Try something different with our Asian Coleslaw, a blend of brightly coloured Cabbage with Ramen Noodle, toasted Almonds and Sesame Seeds tossed in a Tamarind flavoured dressing. You've got to try it before you can really appreciate it.

Grilled Food

 Grilled Striploin

The beauty of a good cut of meat is that you don't need to do much to it. We season our steaks with a light dusting of our signature rub and then let our grilling skills speak for themselves.

Great for a more formal, sit-down style dinner, Steak is a popular option for those looking for an impact dinner option that doesn't stray from what people are used to.

Want to add a little bit of adventure? We can top them with Grilled Mushrooms, Grilled Onions, Bleu Cheese or Pineapple Salsa.

Grilled Chicken Legs

Whether cooking whole legs, or just thighs, the dark meat tends to hold up better to the high heat of grilling. We have many flavours to choose from, including Barbecue, Jerk, Cajun or the Mexican Pollo Loco (Tequila Lime) and Pollo Pibil (Yucutan Style).

On top of being delicious, these cuts of meat tend to be less expensive and provide a great second or third option behind the pricier, but more extravagant, smoked meats and premium cuts.

Lamb or Pork Kabobs

Great as part of a mixed grill, or for cocktail parties, these portable skewers can be shared or broken down into appetizers. Vegetarian options are also easy to incorporate so everyone feels like they're eating the same meal.

The Lamb or Pork is marinated for 8 hours in advice and grilled alongside barbecue friendly vegetables like mushrooms, peppers, zucchini and red onion.

 Grilled Chicken Breasts

The ever-popular chicken breast lends itself well to so many flavours. All options available for the Chicken Legs are options or Grilled Chicken Breasts including Barbecue, Jerk, Cajun or the Mexican Pollo Loco (Tequila Lime) and Pollo Pibil (Yucutan Style).

Chicken Breasts can also be butterflied and served on a bun for a more portable and convenient presentation.


Hand-formed Hamburgers

We are proud to make our burgers by hand, ensuring quality and authenticity. While many like a classic all-beef burger, we prefer to add one of our marinades into the mix.

One of our most popular is the Bajan Burger, similar to Jerk flavouring but without the heat, its a great way to bring the excitement of the Caribbean to your backyard.

Or go with a Mediterranean feel with our Greek Burger, with Mushroom and Feta.


Grilled Corn on the Cob

Sure we offer corn boiled as well as grilled, but one taste of these decadent summer favourites and you may never look at corn the same again.

Each cob is slathered in a Smoked Pepper Aoli and then grilled in its husk until tender. Once fully cooked we peel back the husk, add another layer of Aoili and top with Parmesan Cheese.

Not for those looking to watch their waistlines, this dish is so bad its good, and so good its bad.

Smoked Foods

 Baby Back Ribs


Pork Back Ribs rubbed in our signature Gringo Rub, then smoked for 6-8 hours until fall off the bone tender. Smothered in one of three available Barbecue Sauces and put back on the grill until the sauce gets nice and sticky.

May want to have extra paper towels ready for this one!

 Smoked Sausages

Under appreciated by many, sausages are the staple of every barbecuers repertoire. We provide a variety of kinds from classics like Hot Italian and Honey Garlic to more exotic Caribbean Smoked Sausages.

Served on a bun with all the fixings, or side-by-side with other barbecue favourites, these little babies are a must-have if you and your guests want the authentic barbecue experience.

 Barbecue Beef Brisket

The Brisket is the holy grail of barbecuing. Anyone can fire up a grill and throw a little smoke on their meat. The big guy here requires dedication. The brisket requires 20 hours of smoke, giving new meaning to the barbecuers credo "low and slow."

But the taste is worth the wait. This otherwise tough cut of meat will be so tender we sometimes have difficulty cutting it without it falling apart.

Brisket is usually the centerpiece of our events and you will quickly see why.

Pulled Pork

This crowd pleaser is now seen on menus everywhere, but don't be fooled by the crock pot version, try the real thing. Boneless Pork Shoulder is smoked for 6 hours until it falls apart.

In fact, we don't even know why its called Pulled Pork when there's rarely any pulling required. You'll be able to see and taste the difference the second you try it. Whether on the side or served with coleslaw, pickles or raw onion, this dish is usually the first thing people head for.

 Smoked Chicken Wings

These are not the pub wings you're used to. These wings are marinated in Buttermilk for 24 hours before getting a liberal application of our signature dry rub before being put on the smoker for 1-2 hours.

Once off the smoker, we deep fry them to order before tossing them in our scratch-made sauces, including a Smoked Pepper Hot Sauce, Gringo Barbecue Sauce or our exotic Pibil Sauce. Not a fan of saucy wings? They're great with no sauce at all!

Smoked Salmon

Great as an appetizer or as a main course, our Smoked Salmon gets the barbecue treatment with a few options for rub. We offer a Mango-Lime rub, for a tropical feel, our signature rub or for something a little different, a Honey Mustard glaze.

Served on grilled French Bread as an Hors D'Oeuvre it is accompanied by a Lemon Dill Sauce, a Sriracha Yogurt Sauce or a bright Pineapple Salsa.

In order to keep costs down we also offer to substitute local, in-season fish like Perch or Rainbow Trout.

We took our love of food, especially barbecuing and Mexican food, and found a way to share it at your doorstep. We feel that good food can enhance every Wedding, Anniversary, Birthday Party or Corporate Event. One bite of our mouth-watering offerings and we guarantee you'll be able to tell just how much we love to cook.






 We have experience catering for groups ranging in size from 6-60 people and are happy to meet with you to discuss your next event.

With our custom Tail Gator smoker, we have a mobile Smoker Trailer ready to bring our famous Barbecue right to your front door. Baby Back Ribs, Barbecue Brisket, Smoked Salmon, Smoked Sausages and even Smoked Chicken Wings can all be prepared on site, greeting your guests with the distinctive aroma only smoked meat can provide. Or, if you feel the smoker will overpower your event, we will bring the meat already smoked right to you.

Grilled items are also very popular, with summer favourites like Hamburgers and Sausages served hot off the grill to your guests, or more adventurous options like Grilled Chicken, Jerk Chicken, NY Striploin, Grilled Lamb or Pork Kabobs and grilled vegetables like Corn on the Cob, Grilled Asparagus and our medley of Peppers, Onions, Zucchini and Carrots.

We take pride in using fresh ingredients and buying from local butchers, farmers and grocers to provide you the most value for your money and the highest quality we can offer.

We are very sensitive to allergies and can make almost any dish gluten-free, nut-free and dairy-free. We also provide fully vegetarian options such as Black Bean Burgers, Grilled Portabellos or Chile Rellanos.

We make all of our sauces, marinades and spice rubs from scratch. This gives us complete control over what goes into your food, while also keeping down the cost. Pre-made sauces and rubs tend to add a lot of ingredients we can't pronounce. And if we can't pronounce it, it doesn't go in our food.

Because we have a Smoker Trailer and have portable options for both Grilling and Deep Frying, we are able to come directly to you. We are willing to travel just about anywhere we can drive to, although travel costs will need to be kept in mind. We can easily service Kitchener-Waterloo, Cambridge and Guelph and are only a short drive to service the GTA, Hamilton/Burlington or London areas.

We know that every event is different and every host wants to put their own stamp on the night. We will work with you to custom-design our service. Whether grilling directly in front of your guests and interacting during our dinner service, or discreetly providing everything you need to serve our food in the background, we are prepared for anything can can throw at us. We love interacting with guests and answering questions.

We've got experience with many different events as well, having shared our food at First Birthday Parties, Pre-Wedding Barbecues and Rehearsal Dinners, Cottage Retreats, Dinner Parties and Corporate Milestone events. As far as we're concerned, every event is worthy of good eats!

Although we take inspiration from all over the world in many of our recipes, we have a particular passion for Mexican Food. There's something so vibrant about Mexican cooking, and it matches very well with barbecue, specifically Texas Style barbecue.

We prefer authentic Mexican dishes to the stuff you find in a Drive Thru. Lesser known dishes like Cochinita Pibil, Chile Rellanos and Churros will open your guests eyes to the wonderful local dishes we've come to love. But the more familiar and popular dishes like Tacos, Enchiladas and Carne Asada are also sure to please.

We make our own Salsa Verde, Guacamole and Pineapple Salsas. They are very popular alongside our house-made Tortilla Chips.

We provide a wide range of side dishes, including some Mexican dishes like Chilaquiles and Mexican Rice. We also have many salads, including popular Caesar and Greek Salads, healthier Kale or Broccoli Salads, Pasta and Potato Salads, classic Coleslaw and the exotic Asian Coleslaw alongside Cornbread, Fresh Baked Rolls and Tortilla Chips.
